Crack Corn Recipe

I get lots of request for my Crack Corn that I make for special events and at Christmas. I made it for my recent Holiday Retreat and put it in these cute little milk jars for all my guests. 
I found these tiny Grapevine wreaths at my local craft store. I made the poinsettias using the Reason for the Season stamp set and punch

Here is the Crack Corn recipe:
½ C. butter
1 C. brown sugar
¼ C. dark Karo syrup
Dash of salt
Microwave on high 2 mn. in a glass bowl. 
Stir and quickly return to the microwave for 2 minutes.

Then add:

½ t. baking soda

1/8 t. vanilla

Stir until fluffy. Pour this over the puffed popcorn (I use one full bag of the popcorn) that is in a large Tupperware bowl (or one that is ok to go back into the microwave.) Stir this up, then microwave for 2 minutes, stirring after 1 minute.

Spread this out on wax paper to let it cool. 

Melt 3-4 squares of White Almond bark and drizzle over the popcorn. (A slotted spoon makes a great drizzler!)

The puff corn I buy is made by Chester’s.  This year, I have found it at Target and Dollar General as well as a few local Gas Stations.  It’s always $2 a bag no matter where you buy it!

I have had friends tell me their’s doesn’t turn out right. I’m not sure why, but I think it depends on the microwaves heat. You are basically bringing the caramel up to the right temp (although I don’t know what that step is.) So, play around with the time in your microwave if it doesn’t come out crunchy. Also, I have found mine never turns our right if it’s raining outside. Something to do with the humidity. Here is this year’s firs round. This is 8 bags!!

  1. I am wondering if I could use regular bagged popcorn for this? I can't find the puffed corn anywhere in FL.
